This coffee is made from the production of several farms located in the Tarrazu region, internationally recognized for the quality of its coffees. The particularity of the climate of this region is felt even in the cup, since this coffee offers the perfect and typical profile of Tarrazu: a medium and short acidity on notes of vanilla.
In the land of San Ignacio de Acosta, there are many villages whose name begins with "San" which means "SAINT" in French. Even the capital "San José" begins with this word. This is the reason why we wanted to give this name to this delicious coffee.

The San Ignacio de Acosta area is famous for producing high quality coffees. In the mid-19th century, the inhabitants of the Central Valley migrated to the south of the country, known today as Los Santos. This region has 220 km2 of land cultivated by farms with an average area of 2.5 hectares. 95% of the coffee produced in this region is classified as SHB.

The climate of Los Santos, very particular, is characterized by a period of 7 months of rain (from May to November) and 5 months of dry season (from December to April). The flowering period is from November to March. Harvesting and drying takes place during the dry season.
